Colorful Moment on First Day of School
Oatmeal Pancake with Melted Dark Chocolate and Fresh Organic Mixed Berries
Good snack can be colorful and creative to spark young children's interests in eating healthy. By involving them in food preparation from Practical Life, this inspires them to "eat healthy when they are part of the meal and snack planning process," said Margaret McSweeney, host of the podcast Kitchen Chat," on which she interview about 200 chefs, cookbook authors and food industry experts (CNN Health, September 2017).
On our first day of school, we will open our doors with a healthy gluten-free Oatmeal Pancake snack recipe that is easy, flourless and sugar-free, served with fresh organic mixed berries and can be made in less than 20 minutes:
Ingredients
½ cup dark chocolates (optional)
2 bananas
2 eggs
½ cup pure rolled oats
½ teaspoon baking powder
pinch of salt
pinch of cinnamon
pinch of chia seeds
maple syrup, to serve (optional)
fresh organic berries (or other colorful fruits of your choice)
Preparations
In a blender, combine the peeled banana, dark chololates (optional), eggs, rolled oats, baking powder, cinnamon, chia seeds, and salt.
Allow to blend until the mixture is as smooth as you want it and blended well.
Allow the batter to stand for 10-15 minutes until thickened slightly.
Heat a non-stick frying pan over medium heat.
Fry spoonfuls of the batter until golden brown on both sides.
Serve with a drizzle of fresh organic fruits.
